    I made this today and it turned our well. I did make a few changes to mine. I couldn't find saffron so I used a pinch of smoked paprika. Instead of oysters I used clams. And since none of the seafood markets in my area sold fish bones or fish heads to make a fish stock, I used the shells of shrimp to make a stock. I look forward to adding this to my list of chowders, soups and stews that I make regularly. 😋 ❤

      ​@@THEFOODDEENot sure what you mean. Homogenized milk is such milk where fat is broken into smaller particles which makes an even distribution of fat instead of sitting it on top.

    Do you cook fish/sea food and meats in the same carbon steel pan? My experience is that flavours/smells stick to carbon steel pans and I use stainless/non-stick for e.g. fish and sea food.

      @@THEFOODDEE I think burning the oil is over doing it. Your creating carbon build up. It bonds perfectly below smoke point. But if it works great for you then good.

      @@THEFOODDEE oh makes sense. Less water in butter keeps it crispier for a longer. I just bought ghee and was planning to use it. Is it true? The cold or the syrup makes for a better crisp when you pour it straight out of the oven? Sort of that clash of hot and cold makes it crispier than usual. How long should I allow it to sit before refrigerating it

    Just purchased a Smithey carbon steel 12”. Followed their directions heated new pan on the stove to approximately 450 to 500° then a light coating of some avocado reheat until smoke, boom done. First started cooking some fatty meats with clarified butter, afterwards quick rinse in hot water, wipe dry, lite oil reheat to remove any moisture and pan works like a dream. Gets better with every use. These things are literally indestructible and no more concerns about what kind of utensil I can or cannot use. You can use a shovel if you want.

    I loved your video!! I live in Athens, so I went to most of these places you went to, except for Stani, just haven’t gotten around to it. I LOVE Leyteris, in my opinion they have the best kebab! I wasn’t to crazy about Kostas, I thought there souvlaki in pita was very salty and the whole thing was a bit Greasy. I’m glad you had a nice time in Athens enjoying the great Greek food 😊👌
